 Low Carb Stuffed Meatloaf Minis

Serves 8

INGREDIENTS:
  2             pounds  ground chuck
  2              large  eggs
     1/2           cup  grated Parmesan cheese
     1/4           cup  red onion -- diced
  2        tablespoons  fresh parsley -- chopped
  2       small cloves  garlic -- minced
     1/2      teaspoon  dried oregano
     1/2      teaspoon  dried basil
  1           teaspoon  kosher salt
     1/2      teaspoon  ground black pepper
     1/2           cup  red bell pepper rings -- roasted
  4             ounces  ham -- cut into strips
  8             ounces  mozzarella cheese -- cut into strips (may use sliced or shredded)
                        SPECIAL EQUIPMENT: 8 compartment mini loaf pan
