LOW CARB HAM CHEESE STUFFED WAFFLES

1/2 tsp apple cider vinegar
2 eggs
1 tbsp coconut oil -- melted or olive oil
1/2 tsp vanilla extract
3/4 cup almond meal
2 1/2 tbsp coconut flour
2 tsp baking powder -- this one is corn free
2 tsp sweetener of choice: erythritol for low carb or coconut sugar for primal
2 ounces deli-style fat free ham slices -- (4 slices)
6 ounces cheddar cheese -- (4 slices)
