Makes 16 cookies
INGREDIENTS:
2 cups almond meal -- FLOUR
1/2 cup Splenda Sugar Blend for Baking
1/2 cup butter -- softened
1/2 teaspoon salt -- omit if using salted butter
1 teaspoon vanilla extract
1 teaspoon almond extract
1 egg -- optional

NOTE: First batch, I ran out of vanilla, so I used all almond extract. Next time, I'm going to try using all vanilla and a bit of lemon juice. Or maybe all almond and add some chopped almonds...or...(Ellen)
