Zaatar-Tomato Relish - Mideastern


  1             medium  ripe tomato
  1              small  shallot
  1           teaspoon  extra virgin olive oil
     1/2      teaspoon  zaatar (recipe here)
                        Fresh coarsely ground pepper -- to taste

NOTES : Every Arabic cook seems to have his or her own version of the spice blend (Khoja Hosyn's no doubt being salt-free), but the most essential ingredients are always sesame seed, thyme, and sumac.
