Turkish Yogurt and Spinach Dip



                      Turkish Yogurt and Spinach Dip
SERVES 6
                        salt
  6             ounces  spinach -- (1 bag) or 1 bunch (12 ounces) spinach
  2              large  garlic cloves -- halved
  1         tablespoon  fresh lemon juice
  3        tablespoons  extra-virgin olive oil
  2               cups  plain yogurt -- drained
  2        tablespoons  fresh dill -- chopped
     1/2           cup  flat leaf parsley -- finely chopped
  2        tablespoons  chopped fresh mint -- or 1 teaspoon dried mint
  1              bunch  scallions -- chopped (optional)
                        ground black pepper
